Default OLD (mid 80s) LLL Whole Foods Cookbook, anyone have??

I know it's a long shot but I figure it doesn't hurt to try.

In a previous lifetime, my firstborn was a toddler and we were
vegetarian. I was a La Leche League member and for a while, the LLL
librarian. I had access to several versions of the Whole Foods for the
Whole Family cookbook and had we had tons of favorite recipes from the
books.

That toddler is now 13, and my worn out copy of the book was long ago
misplaced. The recipe I'm craving lately is from an older version of
the book, probably mid-80's... I think it was spiral bound but I could
be wrong. The recipe was for a vegetarian "Tamale Pie". All I recall
was that it had black beans and a cornbread crust, and you made it in a
cake pan or pie pan.

I'd be so appreciative if someone could look in their WFWF cookbook and
see if the recipe is there and post it for me. It might be in later
versions too, I don't know. That mid 80's version was my favorite.

(oh, and if you have that particular version, perhaps you could post
the "Pumpkin Cupcakes" that were listed in the orange kid's cooking
section too?)

Well, thanks, but....

1) I don't see anything that old (the copy I had was, I believe, 1984?
85?)

and

2) I honestly don't want to buy the book for one recipe. I can live
without the pumpkin one. I just hoped to find the tamale pie one. I've
searched the net for general "black bean tamale pie" recipes and tried
some but they just don't taste the same.

3) I'm broke! So, even if I wanted to, buying it is not an option,
assuming I could find the old version in the first place. I saw one
once on eBay but I was broke at the time and haven't seen another old
copy since.

There's a 1981 copy.

Post your request in rec.food.cooking. Someone there may have the
book.

Ummm....ok. Sorry. Seriously, rfc may be a better venue for your
question. I looked on paperbackswap.com and nobody had listed it.

I did not see this. Maybe I'm blind. I looked specifically... and
again, I don't want the whole book.

I will post on rfc, but I posted here first because I figure a lot of
parents might have that book, and it was worth a shot.

Is there some problem with this? Just curious.

Mine is copyright 1981, but I bought it new in 1993, so I would imagine
it's the mid-80s version.

2 C cooked beans, kidney or other
1/2 C chopped onion
1/2 C chopped green pepper
1 tomato, diced
1/4 C diced black olives (optional)
1 C corn (optional)
1 clove garlic, minced
1 t. cumin
1 to 3 t. chili powder (p.286)
1/4 t. oregano
1/2 t. salt (or less)
1 C grated sharp cheese
1/2 lb. ground beef, browned (optional)
1 recipe cornbread (p. 125)

Simmer beans in their cooking liquid with vegetables and spices for 10
minutes. Stir in half the cheese, and the beef, if desired. Prepare
cornbread batter. Pour half the batter into oiled 10" pie plate or
9x13" pan. Add the hot bean mixture, then remaining batter. Bake at
425 for 15 minutes. Top with rest of the cheese. Bake 10 minutes
longer.

I assume you have chili powder and cornbread, so I won't bother with
their versions.

(oh, and if you have that particular version, perhaps you could post
the "Pumpkin Cupcakes" that were listed in the orange kid's cooking
section too?)


1 C cooked mashed pumpkin
1/2 C oil or soft butter
1/2 C honey
2 eggs
1 3/4 C wholewheat flour
or 1 C wholewheat and 3/4 C unbleached flour
1 t. baking soda
1 t. baking powder
1/2 t. salt
1/2 to 1 t/ cinnamon
1/4 to 1/2 t. nutmeg
1/3 C water
1/2 C chopped nuts (optional)
oil or butter for greasing
cream cheese (optional)
honey (optional)

Variation: Omit pumpkin. Use yams, winter squash, or persimmon pulp.

Beat oil and honey together in bowl; add eggs; mix well. Combine dry
ingredients in another bowl. Add dry ingredients and water to honey
mixture Mix in pumpkin and nuts. Preheat oven to 350. Grease loaf
pan with oil or butter or put cupcake liners into muffin pans. Spoon
in batter. Bake for 1 hour for loaf, or 20 to 25 minutes for cupcakes.
Remove pumpkin bread from oven using potholders; put on cooling rack;
cool loaf 15 minutes before inverting. If you like, ice with cream
cheese thinned with honey or try peanut butter frosting.
