Default My daughter loves cheese

My daughter loves cheese. She wants to eat it and nothing else. I am
worried she is not getting enough nutrition. Is there anything I can
make with cheese (pasta, rice dishes, etc.) that can provide nutrition.
Need advice.

You can put cheese on almost anything -- put it on top of veggies, make
a cheese sauce for pasta, add it to rice, make sandwiches (grilled or
otherwise), melt it in scrambled eggs -- I'm having a hard time
imagining anything you couldn't put it on. But a couple of my kids'
favorites were twice baked potatoes (bake potatoes, cut them in half,
scoop out the insides keeping the "skin" whole, mash the insides (I
would even add mixed veggies sometimes), stuff the result back in the
skin, put cheese on top and bake until the cheese melts) and apple
"sandwiches" -- two slices of apple with a slice of cheese in the middle.

(Of course, they also loved grilled cheese sandwiches and mac and cheese)
